- 4 large summer squashes
- 4 tbsp. olive oil
- 6 cups arugula
- 4 cups green beans
- 16 oz. chicken breast, cubed
- 4 roma tomatoes, diced
- Salt & Black pepper
Grill the chicken, and set aside to cool. Cut into strips.
Cube the squash, and sauté it in 2 tbsp. olive oil with the green beans until tender.
In a large bowl, add the arugula, squash, green beans, chicken, and tomatoes.
Drizzle the remaining oil, and add salt and pepper to taste. Yields 4 servings.
