Ingredients - Serves 2
- 1 lb firm tofu, cubed
- 1 C chopped mushrooms
- 1 C chopped red pepper
- 1 C snow peas
- 2 tbsp minced ginger
- 1 tbsp minced garlic
- 1/2 C low sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp hot sauce
- 1 tbsp peanut butter
Preparation:
- Mix peanut butter, rice vinegar, hot sauce, garlic, ginger & soy sauce for the sauce.
- Marinate tofu in sauce for 5 minutes.
- Fry the marinated tofu in sesame oil till brown. Keep the leftover sauce.
- Add vegetables & fry for five more minutes.
- Add left over sauce & cook for another minute.
