Mixed Berry & Tofu Salad

Ingredients - Serves 4

  • 4 cups cubed tofu
  • 6 cups arugula
  • 1 cup blueberries
  • 1 cup strawberries
  • 2 lemons
  • 4 tbsp olive oil
  • 2 tsp oregano
  • Salt & pepper to taste

Preparation

  1. In a large bowl, add arugula, tofu, blueberries, & strawberries.

  2. In a small bowl, add olive oil, lemon juice, oregano, salt & pepper to taste & mix.

  3. Drizzle dressing over salad, & serve.
