Avocado Quinoa Salad

(serves 4)

Ingredients

  • 1 medium avocado
  • 1 small red onion
  • 1 C cooked quinoa
  • 1 C chopped cherry tomatoes
  • 1 C chopped kale
  • 1 C garbanzo beans
  • 2 T lime juice
  • 1 T  olive oil
  • Salt & pepper to taste

Preparation

  1. Mix all ingredients in a bowl & serve fresh.
